Five Valleys welcomes Hash Hub to its growing Food Hall line-up

Five Valleys has welcomed Hash Hub, a new family-run independent food business specialising in a creative take on the traditional British potato hash.

Owned and ran by Simon Ayley, Hash Hub marks the latest chapter in Simon’s hospitality career, which began at sixteen in the kitchen of an a la carte restaurant in his hometown, Kent.

At seventeen, Simon left home to pursue his career, working in Berkshire and Corsica before returning to London to join a high-end private members’ club. He later spent a year travelling and cooking his way around Australia.

After meeting his partner Sarah, the couple moved to Cheltenham, where they opened and ran a successful bed and breakfast for 11 years.

Since then, Simon has worked in a variety of roles before finding the ideal location to launch Hash Hub - Five Valleys Food Hall.

The concept was developed after exploring several different ideas, with Simon deciding to focus on something distinctively British: potato hash.

Hash Hub will offer customers a fresh take on the much-loved dish, drawing on Simon’s experience in professional kitchens and the hospitality industry.

Customers can choose from a tempting range of toppings, including homemade sausage and house dry-cured bacon, as well as the classic corned beef.

Simon Ayley, owner of Hash Hub said: “Hash Hub is all about taking a familiar British favourite and giving it a fresh twist. Potato hash is simple, comforting food, but there are so many ways to make it exciting, and that is what we want to bring to Five Valleys.”
